What even is "Normal"?

I'm sat here observing my kid knowing they're about to get evaluated for autism tomorrow. And so much of that evaluation centers around how much of their person is "abnormal". But what even is "normal" anyway?
Do you ever say a word so many times, it stops sounding like a word? The further away I get from the 1950s heterosexual white picket fence two and a half kids American kink, the more "normal" doesn't really feel like an actual measurable thing.
And of course it is in a clinical, non-human kind of way. If you're looking for a word to use in a research paper, sure, use the word normal. But in a very human sense, normal doesn't exist.
So how do we reconcile that? Humans are complex, beautiful, and nonsensical. Why not enjoy it for what it is?
