Strawberry Toddler Prayer Cake

So let's put this in context. We had just spent a week indoors because of the Oregon Wildfires and then both myself and my toddler got a cold/flu thing that is still feeling icky all over my body. So we've spent way too much time in front of the TV. And my beloved spouse decided to get strawberries and I also ordered strawberries for our grocery pick up order. But these strawberries were on their way out before we could eat them and some of us.. ok all of us have issues eating things that have any kind of deformity on them. So mashing them all up seemed like the thing to do. And then, cake. Because cake. So this is called strawberry toddler prayer cake because I measured nothing and my toddler put the flour in, over which I had little to no control. So I'm praying to the deities in my house that it's not a flop, and that I didn't just waste all that food. Yay to sickness delerium baking.
Ingredients:
a pint and a half.. ish.. of strawberries with tops cut off and halved
about a third cup (probably) of honey
1 tsp.. I think.. of baking soda
a pinch of salt
1/2 cup milk of choice and then fill up to 2/3 cup with vinegar
3 eggs (I just.. mostly wanted to use up the eggs I had in the fridge.. it'll be fine.. probably..)
1 tsp vanilla extract
What I can only assume was about 3 (???) cups of flour
Instructions:
So, as established at the beginning of this article, this cake was born of delerium. Take this with a.. pinch.. of salt.
Mash the strawberries using your preferred method. I had a sort of bean masher on hand? You want chunks but not puree. Get there how you need to get there.
Add eggs and vanilla and whip (I didn't feel like dirtying dishes so I used a fork.. a small one.. I regretted it..)
Add in the remaining ingredients and mix up. You may need more flour. You may need less. My toddler added it in and I have no idea how much they actually added.... Go half cup by half cup till it resembles cake batter.
Bake at 375 for 50-60 minutes. I used a 9 inch round cake pan used for souffles. Because it's what I had. Again. Delerium. Here's hoping it tastes edible.
Update on the taste and texture: This is a pretty wet cake (cue the jokes). So it'll be pretty brown on the top before it's done. I let it come out of the oven when it was still sticky on the bottom of the toothpick because it was mostly done. You could tent some aluminum foil over the top in the last 15 minutes to stop it from burning and then let it cook longer. But keep in mind that this is a strawbery cake so it'll be pretty hard to cook it all the way dry and you may end up with a super dry cake if you cook it too much. Use your own discretion and your own personal sensory needs as a gauge.
Second update: having tasted it, it definitely could benefit from a drizzle.
